Giữa ngày hè oi nóng trong tủ lạnh có sẵn ly thạch ngon mát để tráng miệng thì thật không còn gì bằng. Phần lớp dưới thạch được làm từ sữa dừa thơm ngon, lớp trên hương thơm nhẹ từ hoa quế tạo cảm giác thoải mái cho người thưởng thức.
Thạch sữa dừa: Trong 1 nồi lớn, cho 28gr bột gelatine, 110gr đường trắng vào, trộn đều. Đổ 350ml nước nóng vào, khuấy đều nhanh tay cho bột gelatine, đường trắng tan hết, tắt bếp.
Đổ kem whipping, nước cốt dừa vào, khuấy đều cho phần thạch hòa quyện vào nhau. Đổ hỗn hợp vào 1/2 khuôn thạch, cho vào tủ lạnh ít nhất 1 giờ đồng hồ trước khi làm phần thạch hoa quế.
Phần thạch hoa quế: Trong 1 nồi khác, cho 25gr bột gelatine, 100gr đường trắng vào nồi, trộn đều. Đổ tiếp, 250ml nước nóng, 250ml nước lạnh vào, bắc lên bếp, khuấy đều cho bột gelatin, đường trắng tan hết.
Cuối cùng, cho siro hoa quế, hoa quế khô vào, khuấy đều, tắt bếp ngay.
Lấy phần thạch sữa dừa ra, đổ thạch hoa quế lên trên, để nguội cho đông. Đặt thạch vào ngăn mát tủ lạnh khoảng 2-3 giờ là xong. Khi ăn chỉ việc lấy ra khỏi khuôn, thưởng thức.
